Description: White crystal or crystalline powder, almost odorless, taste sweet afterwards sour. Soluble in water (60g/ml), slightly soluble in ethanol (1g/100ml), almost insoluble in ether. in water, Hydrolyzed gluconic acid and-δ-lactone and-r-lactone equilibrium mixture. PH is 3.5 in the 1% aqueous solution ,after 2 hour the PH is 2.5. it is about 153 ℃ Decomposition
